SpringBoot Align MockMvc Kotlin example to use RestTestClient

Once we switch to framework's snapshots that incudes https://github.com/spring-projects/spring-framework/issues/35558 we'll be able to update MyMockMvcTests.kt to include a RestTestClient example.
