SpringBoot Rename spring-boot-kotlin-serialization to align with the name of the Kotlinx module that it pulls in

spring-boot-kotlin-serialization depends on org.jetbrains.kotlinx:kotlinx-serialization-json so it should really be named spring-boot-kotlinx-serialization-json
